I'd say you're about spot on for saying the idea of transubstantiation is ridiculous, but let's uncover a bit more of why Jesus said what he did.

The meal they were sitting down for was the Passover meal, celebrating God's deliverance - using the blood of a flawless lamb on the doorposts of the Hebrews to tell the messenger of death to "pass over" that house.

The bread he was holding and breaking up was a matzo (A bread without leavening, as leavening was not allowed around the Passover, and leavening is a symbol for sin). That is a specific matzo that is known as the Afikomen, one of three pieces, it is the center piece that is broken, wrapped in linen, and hidden until after the passover meal, then brought back and shared among all present.
http://www.chaim.org/afikomen.htm

When He drank the wine, and said it was His blood poured out, it was the third cup, the cup of redemption.

Then He said He would not drink the fruit of the vine again until the Kingdom of God came - He did not yet drink the fourth cup, the cup of praise.

Another example of how you are willing to use the tools of skepticism in articles of religion that you *do not* believe in while completely failing to do so to the silly stuff you do believe in.

Take any of the miracles in your holy book for instance, and ask yourself "did this happen or did the person who wrote about it do lots of drugs?". The most likely answer should be obvious to anyone but a Christian.

I have no idea if you believe in the whole trinity nonsense, but the same logic that you (actually) apply above regarding things being two things at once, can be applied to the myth of the polytheistic gods of Christianity masquerading as one.

"As for how the disciples took it, well I suppose if one were to put themselves in their sandals and imagine sitting there at the table with Jesus in the upper room, when Jesus says “this is my body” and “this is my blood” I just can’t imagine that the disciples would have ever taken that literally."

Yet you have no problem believing that they believe all kinds of silly things like "I'm God" or "adoring my dad is more important than being nice to each other".

If you're going to use Occam's razor, use it consistently. That, or you are a hypocrite.
